Chocolate chip cookies may be my favorite comfort treat of all time. Between the flavor of the cookie to the warm melted chocolate, this cookie is hard to beat. Add a glass of ice cold milk and you’re good to go. I grew up on the Nestle Toll House recipe
as it was a staple for my family.
Here in Switzerland I’ve had to change the recipe to substitute ingredients that I cannot find in the Migro or Coop. For example, I cannot find brown sugar in the grocery stores here, so instead I’ve had to make my own brown sugar. (This simple recipe can be found at the end of this post!) I use vanilla bean paste and vanilla beans in place of regular pure vanilla extract. This gives the cookies a more rich and well-rounded flavor.
Here is my new (and improved) recipe for the Upgraded Toll House Chocolate Chip Cookie:
These cookies come out chewy and delicious! You won’t be able to eat just one!
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed home-made brown sugar
- 1/4 teaspoon vanilla bean paste*
- 1/8 teaspoon vanilla beans*
- 2 large eggs
- 2 to 2.5 cups of chopped chocolate (semi-sweet preferred, but any will do just fine
* You can purchase vanilla beans and vanilla bean paste at Bedda Bella! (That’s what I use!)
oven to 375° F.
COMBINE the flour, baking soda and salt in small bowl. (I like to sift them through a sieve to completely incorporate all of the dry ingredients together.)
BEAT the butter, granulated sugar, brown sugar, vanilla bean paste and vanilla beans in large mixing bowl until creamy and fluffy.
ADD the eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in the chopped chocolate.
by rounded tablespoon onto ungreased baking sheets. (I prefer to use baking paper on top of the cookie sheet for an easy cleanup!)
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
EAT AND ENJOY by grabbing a grabbing a freshly baked cooking and pouring yourself a glass of ice cold milk!

Homemade Brown Sugar
* 1 cup cane sugar
* 1 tablespoon molasses
Combine the ingredients in a mixing bowl and beat until the ingredients are incorporated into one another.
